Alexandria's Seafood Pasta Salad (سلطة معكرونة بحرية الإسكندرية)
This Alexandria's Seafood Pasta Salad is a refreshing and flavorful dish that combines the best of Egyptian cuisine and the bounty of the Mediterranean Sea. It's perfect for a light lunch or as a side dish for a summer gathering.
Ingredients
- 250g pasta
- 200g mixed seafood (shrimp, calamari, and mussels)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and set aside to cool.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed seafood and cook for 3-4 minutes until fully cooked. Remove from heat and let it cool.
- In a large bowl, combine the cooked pasta, cooked seafood, cherry tomatoes, black olives, red onion, and parsley.
- In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.
- Sprinkle the crumbled feta cheese on top before serving.
