Alexandria's Seafood Pasta Salad (سلطة معكرونة بحرية الإسكندرية)

Ingredients

  • 250g pasta
  • 200g mixed seafood (shrimp, calamari, and mussels)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside to cool.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed seafood and cook for 3-4 minutes until fully cooked. Remove from heat and let it cool.
  3. In a large bowl, combine the cooked pasta, cooked seafood, cherry tomatoes, black olives, red onion, and parsley.
  4. In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.
  5. Sprinkle the crumbled feta cheese on top before serving.
