ريزوتو البحرية الإسكندرية (Alexandria's Seafood Risotto) is a classic Egyptian dish that combines the flavors of the Mediterranean Sea with the rich tradition of Egyptian cuisine. This creamy and flavorful risotto is packed with a variety of seafood and is sure to impress your family and friends.
Ingredients
- 1 cup Arborio rice
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 4 cups seafood or chicken broth
- 1/2 cup white wine
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb scallops
- 1/2 lb mussels, cleaned and debearded
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
- Add the Arborio rice to the skillet and stir to coat the rice with the oil. Cook for 2-3 minutes until the rice becomes translucent around the edges.
- Pour in the white wine and cook until it is absorbed by the rice.
- Gradually add the seafood or chicken broth, 1/2 cup at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
- After about 15 minutes, add the shrimp, scallops, and mussels to the skillet. Continue to cook and stir until the seafood is cooked through and the rice is creamy.
- Stir in the grated Parmesan cheese and butter until melted and well combined. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving. Garnish with fresh parsley and serve hot.
