Alexandria's Seafood Risotto (ريزوتو البحرية الإسكندرية)

Ingredients

  • 1 cup Arborio rice
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups seafood or chicken broth
  • 1/2 cup white wine
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb scallops
  • 1/2 lb mussels, cleaned and debearded
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  2. Add the Arborio rice to the skillet and stir to coat the rice with the oil. Cook for 2-3 minutes until the rice becomes translucent around the edges.
  3. Pour in the white wine and cook until it is absorbed by the rice.
  4. Gradually add the seafood or chicken broth, 1/2 cup at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
  5. After about 15 minutes, add the shrimp, scallops, and mussels to the skillet. Continue to cook and stir until the seafood is cooked through and the rice is creamy.
  6. Stir in the grated Parmesan cheese and butter until melted and well combined. Season with salt and pepper to taste.
  7. Remove from heat and let the risotto rest for a few minutes before serving. Garnish with fresh parsley and serve hot.
