Algerian Chicken and Chickpea Stew (Djedj B'leblab)

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, paprika, turmeric, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the diced tomatoes and chickpeas, then pour in the chicken broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the chicken is cooked through and tender.
  6. Adjust the seasoning if needed. Serve the Djedj B'leblab hot, garnished with chopped cilantro.
