Algerian Chicken and Olive Stew (Djedj M'kalli)
Djedj M'kalli is a traditional Algerian chicken and olive stew that is bursting with flavor and aromatic spices. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/2 cup green olives
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups water
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and cook until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the ground cumin, paprika, turmeric, and ginger, and season with salt and pepper.
- Pour in the water and bring the stew to a boil. Reduce the heat, cover, and simmer for 45 minutes.
- Add the green olives and continue to simmer for an additional 15 minutes.
- Stir in the chopped cilantro and adjust the seasoning if needed.
- Serve the Djedj M'kalli hot with couscous or crusty bread.
