Algerian Chicken and Olive Stew (Djedj M'kalli)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 cup green olives
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups water

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, and cook until softened.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the ground cumin, paprika, turmeric, and ginger, and season with salt and pepper.
  4. Pour in the water and bring the stew to a boil. Reduce the heat, cover, and simmer for 45 minutes.
  5. Add the green olives and continue to simmer for an additional 15 minutes.
  6. Stir in the chopped cilantro and adjust the seasoning if needed.
  7. Serve the Djedj M'kalli hot with couscous or crusty bread.
