Algerian Spiced Lentil and Vegetable Stew (Djedj M'kalli)

Ingredients
- 1 cup green or brown lentils, rinsed
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional for heat)
- Salt and pepper to taste
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1/4 cup chopped fresh cilantro or parsley
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
- Add the carrots and potatoes to the pot, and cook for another 5 minutes.
- Stir in the cumin, coriander, paprika, turmeric, and cayenne pepper. Season with salt and pepper.
- Pour in the vegetable broth and diced tomatoes. Add the lentils and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the lentils and vegetables are tender.
- Stir in the chopped cilantro or parsley before serving.
