Algerian Spiced Lentil and Vegetable Stew (Djedj M'kalli)

Ingredients

  • 1 cup green or brown lentils, rinsed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup chopped fresh cilantro or parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
  2. Add the carrots and potatoes to the pot, and cook for another 5 minutes.
  3. Stir in the cumin, coriander, paprika, turmeric, and cayenne pepper. Season with salt and pepper.
  4. Pour in the vegetable broth and diced tomatoes. Add the lentils and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the lentils and vegetables are tender.
  6. Stir in the chopped cilantro or parsley before serving.
