Alicha (pumpkin Curry)
Alicha is a traditional Eritrean dish that features tender pumpkin simmered in a flavorful curry sauce. This vegetarian dish is perfect for a cozy night in and is sure to warm you up from the inside out.
Ingredients
- 2 cups diced pumpkin
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tomatoes, chopped
- 1/2 cup vegetable broth
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the tomatoes, turmeric, cumin, coriander, and cinnamon. Cook for 5 minutes, stirring occasionally.
- Add the diced pumpkin and vegetable broth. Season with salt and pepper.
- Cover the pot and simmer for 25-30 minutes, or until the pumpkin is tender.
- Serve the alicha hot with injera or rice.
