Alicha (pumpkin Curry)

Alicha is a traditional Eritrean dish that features tender pumpkin simmered in a flavorful curry sauce. This vegetarian dish is perfect for a cozy night in and is sure to warm you up from the inside out.

Alicha (pumpkin Curry)

Ingredients

  • 2 cups diced pumpkin
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tomatoes, chopped
  • 1/2 cup vegetable broth
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the tomatoes, turmeric, cumin, coriander, and cinnamon. Cook for 5 minutes, stirring occasionally.
  4. Add the diced pumpkin and vegetable broth. Season with salt and pepper.
  5. Cover the pot and simmer for 25-30 minutes, or until the pumpkin is tender.
  6. Serve the alicha hot with injera or rice.
