Aligot: Cheesy Mashed Potatoes With Garlic

Ingredients

  • 2 lbs (900g) potatoes, peeled and cut into chunks
  • 4 cloves garlic, minced
  • 1 cup (240ml) whole milk
  • 8 oz (225g) cheese, such as mozzarella or Gruyère, shredded
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes and garlic in a large pot of salted water until tender, about 15 minutes.
  2. Drain the potatoes and garlic, then return them to the pot.
  3. Using a potato masher, mash the potatoes and garlic together.
  4. Heat the milk in a small saucepan until warm.
  5. Gradually stir the warm milk into the mashed potatoes until smooth.
  6. Add the shredded cheese to the potatoes and continue to stir until the cheese is melted and the mixture is creamy.
  7. Season with salt and pepper to taste.
