Aligot: Cheesy Mashed Potatoes With Garlic
Aligot is a traditional Occitan dish that features creamy mashed potatoes mixed with melted cheese and garlic. This indulgent side dish is perfect for special occasions or as a comforting treat.
Ingredients
- 2 lbs (900g) potatoes, peeled and cut into chunks
- 4 cloves garlic, minced
- 1 cup (240ml) whole milk
- 8 oz (225g) cheese, such as mozzarella or Gruyère, shredded
- Salt and pepper to taste
Instructions
- Boil the potatoes and garlic in a large pot of salted water until tender, about 15 minutes.
- Drain the potatoes and garlic, then return them to the pot.
- Using a potato masher, mash the potatoes and garlic together.
- Heat the milk in a small saucepan until warm.
- Gradually stir the warm milk into the mashed potatoes until smooth.
- Add the shredded cheese to the potatoes and continue to stir until the cheese is melted and the mixture is creamy.
- Season with salt and pepper to taste.
