इलाहाबाद की केसर पेड़ा (Allahabad Ki Kesar Peda) is a traditional sweet from the Uttar Pradesh Cuisine. It is a rich and creamy dessert flavored with saffron, making it a perfect treat for special occasions and festivals.
Ingredients
- 1 liter full-fat milk
- 1 cup sugar
- 1/2 teaspoon saffron strands
- 1 tablespoon ghee
- 1/2 teaspoon cardamom powder
Instructions
- In a heavy-bottomed pan, bring the milk to a boil.
- Simmer the milk on low heat, stirring occasionally, until it reduces to half the quantity.
- Add sugar, saffron strands, and ghee to the reduced milk. Cook on low heat, stirring continuously.
- Continue cooking until the mixture thickens and starts leaving the sides of the pan.
- Add cardamom powder and mix well.
- Remove the mixture from the heat and let it cool for a few minutes.
- Take small portions of the mixture and roll them into smooth balls to form pedas.
- Garnish with saffron strands and chopped nuts if desired.
- Allow the pedas to cool completely before serving.
