Ingredients

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron strands
  • 2 tablespoons chopped nuts (almonds, pistachios, cashews)
  • 1/2 teaspoon cardamom powder

Instructions

  1. In a heavy-bottomed pan, bring the milk to a boil and then simmer on low heat, stirring occasionally, until it reduces to half its original quantity.
  2. Add sugar, saffron strands, and chopped nuts to the reduced milk and continue to cook on low heat, stirring frequently, until the mixture thickens.
  3. Once the mixture reaches a thick consistency, add cardamom powder and mix well. Remove from heat and let it cool.
  4. Refrigerate the nimish for a few hours before serving. Garnish with additional chopped nuts before serving.
