Alligator in Tomato Sauce, known as Mouthwatering Ibihaza in Burundian cuisine, is a delicious and unique dish that combines the flavors of tender alligator meat with a rich tomato sauce.
Ingredients
- 1 lb alligator meat, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz) crushed tomatoes
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the alligator meat and cook until browned on all sides, then remove from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are soft.
- Pour in the crushed tomatoes, paprika, cayenne pepper, salt, and pepper. Stir to combine.
- Return the browned alligator meat to the pot and stir to coat it with the tomato sauce.
- Cover the pot and let the alligator simmer in the tomato sauce for 1.5 hours, stirring occasionally.
- Once the alligator is tender, adjust the seasoning if needed and serve hot.
