Ingredients

  • 1 lb alligator meat, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the alligator meat and cook until browned on all sides, then remove from the pot and set aside.
  3. In the same pot, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are soft.
  4. Pour in the crushed tomatoes, paprika, cayenne pepper, salt, and pepper. Stir to combine.
  5. Return the browned alligator meat to the pot and stir to coat it with the tomato sauce.
  6. Cover the pot and let the alligator simmer in the tomato sauce for 1.5 hours, stirring occasionally.
  7. Once the alligator is tender, adjust the seasoning if needed and serve hot.
