- 4 ripe plantains, peeled and sliced

- 1 scotch bonnet pepper, finely chopped
- 1 teaspoon ground ginger
- 1 teaspoon ground garlic
- Salt to taste
Instructions
- Heat the vegetable oil in a frying pan over medium heat.
- Fry the plantain slices until golden brown, then remove and drain on paper towels.
- In a separate pan, sauté the onions, tomatoes, and scotch bonnet pepper until soft.
- Add the ground ginger, ground garlic, and salt to the tomato mixture, and simmer for 5 minutes.
- Serve the fried plantains with the spiced tomato sauce on the side.
