Ingredients
- 2 pounds fresh clams
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon sweet paprika
- 1/2 cup dry white wine
- 1 cup fish or vegetable broth
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and sweet paprika, and cook for another 2 minutes.
- Pour in the white wine and bring to a simmer. Let it cook for 3-4 minutes to reduce slightly.
- Add the clams to the pot and pour in the fish or vegetable broth. Cover and cook for 5-7 minutes, or until the clams have opened.
- Season with salt and pepper to taste, then sprinkle with chopped fresh parsley.
