Almond Flatbread (coca De Almendra)
Almond Flatbread, known as Coca de Almendra, is a traditional Valencian dessert that is both delicious and easy to make. This sweet and crispy flatbread is perfect for serving with coffee or tea, or as a light dessert after a meal.
Ingredients
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon almond extract
- 1/4 cup sliced almonds
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, sugar, baking powder, and salt.
- Add the eggs and almond extract to the dry ingredients, and mix until a dough forms.
- Transfer the dough to the prepared baking sheet and press it into a flat, rectangular shape, about 1/4 inch thick.
- Sprinkle the sliced almonds evenly over the top of the dough, pressing them gently to adhere.
- Bake for 20-25 minutes, or until the flatbread is golden brown around the edges.
- Remove from the oven and let it cool completely before slicing into squares or rectangles to serve.
