Ingredients

  • 1 lb fresh ahi tuna, cubed
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1/2 tsp ginger, grated
  • 2 green onions, thinly sliced
  • 1/2 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup edamame
  • 1/4 cup shredded carrots
  • 2 cups cooked white or brown rice
  • Sesame seeds, for garnish
  • Nori strips, for garnish

Instructions

  1. In a bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and grated ginger.
  2. Add the cubed ahi tuna and green onions to the marinade, and gently toss to coat. Refrigerate for 10 minutes.
  3. Divide the cooked rice among serving bowls.
  4. Top the rice with marinated ahi tuna, avocado, cucumber, edamame, and shredded carrots.
  5. Garnish with sesame seeds and nori strips.
