Aloo Bhujia (spicy Potato Curry)

Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
- Add garlic, ginger, and green chilies. Sauté for a few minutes.
- Add tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and oil separates.
- Add diced potatoes and mix well. Cover and cook until the potatoes are tender.
- Sprinkle garam masala and garnish with fresh cilantro before serving.
