Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
  2. Add garlic, ginger, and green chilies. Sauté for a few minutes.
  3. Add tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and oil separates.
  4. Add diced potatoes and mix well. Cover and cook until the potatoes are tender.
  5. Sprinkle garam masala and garnish with fresh cilantro before serving.
