Aloo Bhujia (spicy Potato Stir-fry)
Aloo Bhujia is a delicious and spicy potato stir-fry that is popular in Pashtun Cuisine. It is a flavorful dish that can be enjoyed as a side or a main course.
Ingredients
- 4 medium potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
Instructions
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and green chilies. Sauté until onions are golden brown.
- Add diced potatoes, turmeric powder, red chili powder, and salt. Mix well and cook covered until potatoes are tender.
- Add chopped tomatoes and cook until they are soft and well combined with the potatoes.
- Sprinkle garam masala and mix gently. Cook for another 2-3 minutes.
- Remove from heat and garnish with fresh cilantro.
