Aloo Bhujia (spicy Potato Stir-fry)

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and green chilies. Sauté until onions are golden brown.
  3. Add diced potatoes, turmeric powder, red chili powder, and salt. Mix well and cook covered until potatoes are tender.
  4. Add chopped tomatoes and cook until they are soft and well combined with the potatoes.
  5. Sprinkle garam masala and mix gently. Cook for another 2-3 minutes.
  6. Remove from heat and garnish with fresh cilantro.
