Aloo Chop (spiced Potato Cutlets)

Ingredients
- 4 large potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- Handful of fresh coriander leaves, chopped
- 1 cup breadcrumbs
- Oil for frying
Instructions
- In a large bowl, mix together the mashed potatoes, onion, green chilies, ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder, salt, and fresh coriander leaves.
- Divide the mixture into equal portions and shape them into round patties or cutlets.
- Roll each patty in breadcrumbs until fully coated.
- Heat oil in a pan over medium heat and fry the cutlets until golden brown on both sides.
- Remove the cutlets from the pan and place them on a paper towel to drain excess oil.
- Serve hot with your favorite chutney or sauce.
