Aloo Dum (nawabi Dum Aloo)

Ingredients

  • 4 large potatoes, boiled and peeled
  • 1 cup yogurt
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup cashew paste
  • 1/4 cup cream
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
  3. Whisk the yogurt and cashew paste together, then add it to the pan along with red chili powder, turmeric powder, and salt. Cook for 5 minutes.
  4. Add the boiled potatoes and cream. Cover and cook on low heat for 15-20 minutes.
  5. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
