Aloo Dum (nawabi Dum Aloo)
Aloo Dum, also known as Nawabi Dum Aloo, is a popular dish from the Awadhi Cuisine of India. It is a rich and flavorful potato curry that is perfect for special occasions and gatherings.
Ingredients
- 4 large potatoes, boiled and peeled
- 1 cup yogurt
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup cashew paste
- 1/4 cup cream
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
- Whisk the yogurt and cashew paste together, then add it to the pan along with red chili powder, turmeric powder, and salt. Cook for 5 minutes.
- Add the boiled potatoes and cream. Cover and cook on low heat for 15-20 minutes.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
