Aloo Gobi Masala

Ingredients
- 2 medium potatoes, peeled and diced
- 1 small cauliflower, cut into florets
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro leaves for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chili. Sauté for a minute.
- Add chopped tomatoes and cook until they turn soft and oil starts to separate.
- Add turmeric, coriander powder, garam masala, red chili powder, and salt. Mix well.
- Add diced potatoes and cauliflower florets. Mix until the spices coat the vegetables evenly.
- Cover and cook on low heat until the potatoes and cauliflower are tender, stirring occasionally.
- Garnish with fresh cilantro leaves and serve hot with roti or rice.
