Aloo Mangxo (assamese Style Potato Curry)

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 tbsp mustard oil
  • 1 tsp panch phoron (Bengali five-spice blend)
  • 2 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • Salt to taste
  • 1 cup water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add panch phoron and green chilies. Sauté until aromatic.
  2. Add the cubed potatoes, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the potatoes with the spices.
  3. Pour in the water and bring to a boil. Then, cover and simmer until the potatoes are tender.
  4. Garnish with fresh coriander leaves and serve hot with rice or roti.
