Aloo Mangxo (assamese Style Potato Curry)
Aloo Mangxo is a traditional Assamese potato curry that is bursting with flavors and spices. This vegetarian dish is a staple in Assamese cuisine and is perfect for a comforting meal.
Ingredients
- 4 medium potatoes, peeled and cubed
- 2 tbsp mustard oil
- 1 tsp panch phoron (Bengali five-spice blend)
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- Salt to taste
- 1 cup water
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and add panch phoron and green chilies. Sauté until aromatic.
- Add the cubed potatoes, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to coat the potatoes with the spices.
- Pour in the water and bring to a boil. Then, cover and simmer until the potatoes are tender.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
