Aloo Masala (spicy Potato Curry)

Ingredients

  • 4 large potatoes, peeled and cubed
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the onions until golden brown.
  2. Add the ginger-garlic paste and green chilies, and sauté for a few minutes.
  3. Stir in the turmeric, red chili powder, and garam masala.
  4. Add the tomato puree and cook until the oil separates.
  5. Add the cubed potatoes, salt, and a cup of water. Cover and cook until the potatoes are tender.
  6. Garnish with fresh coriander leaves and serve hot.
