Aloo Matar (spiced Potato And Pea Curry)
Aloo Matar is a classic Afghan dish featuring spiced potatoes and peas in a flavorful curry sauce. This comforting and aromatic dish is perfect for a hearty meal.
Ingredients
- 4 medium potatoes, peeled and cubed
- 1 cup frozen peas
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until golden brown.
- Stir in minced garlic, grated ginger, and green chilies. Cook for 2 minutes.
- Add chopped tomatoes, turmeric, ground coriander, ground cumin, and salt. Cook until the tomatoes are soft and oil starts to separate.
- Add cubed potatoes and 1 cup of water. Cover and cook until the potatoes are tender.
- Add frozen peas and garam masala. Cook for an additional 5 minutes.
- Garnish with fresh cilantro and serve hot with rice or naan.
