Aloo Shingara (spiced Potato Samosas)
Aloo Shingara is a popular Bangladeshi snack made with spiced potato filling wrapped in a crispy pastry shell. It's a delicious and savory treat enjoyed by many.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 4 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
- Oil for deep frying
Instructions
- In a large bowl, mix the flour and salt. Add the oil and mix until the mixture resembles breadcrumbs. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20 minutes.
- In a separate bowl, mix the mashed potatoes, chopped onion, green chilies, cumin seeds, garam masala, turmeric powder, red chili powder, coriander leaves, and salt.
- Divide the dough into small balls and roll each ball into a thin circle. Cut each circle in half to form semi-circles.
- Take one semi-circle, fold it into a cone shape, and seal the edges with water. Fill the cone with the potato mixture and seal the open edge to form a triangular samosa. Repeat with the remaining dough and filling.
- Heat oil in a deep pan and fry the samosas in batches until golden brown and crispy. Drain on paper towels.
