Aloo Tacos (spiced Potato Tacos)

Ingredients

  • 4 medium potatoes, boiled and diced
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 8 small tortillas
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onion and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute, then add the diced potatoes.
  3. Sprinkle turmeric powder, coriander powder, garam masala, and salt. Mix well and cook for 5-7 minutes.
  4. Warm the tortillas in a separate pan or microwave.
  5. Place a spoonful of the spiced potato mixture on each tortilla, garnish with chopped cilantro, and fold into tacos.
