Alpen Pilzrisotto (alpine Mushroom Risotto)

Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup white wine
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mixed fresh mushrooms (such as porcini, chanterelle, or oyster), sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a saucepan, heat the chicken or vegetable broth over low heat.
  2. In a separate large pan, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the Arborio rice to the pan and stir to coat the grains with the oil. Cook for 1-2 minutes until the rice becomes translucent around the edges.
  4. Pour in the white wine and stir until it is absorbed by the rice.
  5. Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. After about 15 minutes, add the sliced mushrooms to the risotto and continue adding the broth until the rice is creamy and al dente.
  7. Stir in the grated Parmesan cheese and butter, and season with salt and pepper to taste.
  8. Remove from heat and let the risotto rest for a few minutes before serving.
  9. Garnish with fresh parsley and additional Parmesan cheese if desired.
