Alpen Pilzrisotto (alpine Mushroom Risotto)
Alpen Pilzrisotto, or Alpine Mushroom Risotto, is a classic dish from Liechtenstein that showcases the rich and earthy flavors of the region's mushrooms. This creamy and comforting risotto is perfect for a cozy night in or as a side dish for a special meal.
Ingredients
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mixed fresh mushrooms (such as porcini, chanterelle, or oyster), sliced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a saucepan, heat the chicken or vegetable broth over low heat.
- In a separate large pan, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the Arborio rice to the pan and stir to coat the grains with the oil. Cook for 1-2 minutes until the rice becomes translucent around the edges.
- Pour in the white wine and stir until it is absorbed by the rice.
- Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- After about 15 minutes, add the sliced mushrooms to the risotto and continue adding the broth until the rice is creamy and al dente.
- Stir in the grated Parmesan cheese and butter, and season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
- Garnish with fresh parsley and additional Parmesan cheese if desired.
