Alpen Pilzsuppe (alpine Mushroom Soup)
Alpen Pilzsuppe, or Alpine Mushroom Soup, is a traditional dish from Liechtenstein that is perfect for warming up on a chilly day. This creamy and flavorful soup is made with a variety of mushrooms and seasoned with aromatic herbs, creating a comforting and satisfying meal.
Ingredients
- 500g mixed mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
- Add the sliced mushrooms to the pot and cook until they release their liquid and become golden brown.
- Sprinkle the flour over the mushrooms and stir to combine. Cook for 2 minutes to remove the raw flour taste.
- Pour in the vegetable broth and bring the soup to a simmer. Cook for 15 minutes to allow the flavors to meld.
- Stir in the heavy cream and thyme, then season with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the pot from the heat and let the soup cool slightly before serving.
