Alpine Apricot Dumplings (Alpen Marillenknödel)

Ingredients

  • 6 ripe apricots
  • 1 cup breadcrumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 2 cups all-purpose flour

Instructions

  1. Pit the apricots and stuff each one with a sugar cube.
  2. In a bowl, mix the flour, egg, and a pinch of salt to form a dough.
  3. Divide the dough into 6 equal parts and wrap each apricot with the dough, forming dumplings.
  4. Boil a pot of water and gently place the dumplings in the water. Cook for 15-20 minutes.
  5. In a separate pan, melt the butter and add the breadcrumbs and cinnamon. Cook until golden brown.
  6. Roll the cooked dumplings in the breadcrumb mixture until fully coated.
  7. Serve the Alpen Marillenknödel warm and enjoy!
