Alpine Cabbage and Bacon Soup (Alpen Kohl-Speck-Suppe)
Alpen Kohl-Speck-Suppe, or Alpine Cabbage and Bacon Soup, is a traditional dish from Liechtenstein that is hearty, flavorful, and perfect for a cold winter day.
Ingredients
- 1 head of cabbage, chopped
- 200g bacon, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bay leaf
- 1 teaspoon caraway seeds
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the chopped onion to the pot and sauté until translucent.
- Add the chopped cabbage, sliced carrots, diced potatoes, bay leaf, and caraway seeds to the pot. Stir to combine.
- Pour in the chicken or vegetable broth and bring the soup to a boil. Reduce heat and simmer for 45 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
- Serve the soup hot, garnished with the crispy bacon.
