Alpine Cabbage and Bacon Soup (Alpen Kohl-Speck-Suppe)

Ingredients

  • 1 head of cabbage, chopped
  • 200g bacon, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bay leaf
  • 1 teaspoon caraway seeds
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the chopped onion to the pot and sauté until translucent.
  3. Add the chopped cabbage, sliced carrots, diced potatoes, bay leaf, and caraway seeds to the pot. Stir to combine.
  4. Pour in the chicken or vegetable broth and bring the soup to a boil. Reduce heat and simmer for 45 minutes, or until the vegetables are tender.
  5. Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
  6. Serve the soup hot, garnished with the crispy bacon.
