Alpine Wild Mushroom and Gruyère Quiche (Alpen Wildpilz-Gruyère-Quiche)
This Alpen Wildpilz-Gruyère-Quiche (Alpine Wild Mushroom and Gruyère Quiche) is a classic dish from Liechtensteiner cuisine, featuring the rich flavors of wild mushrooms and Gruyère cheese in a savory custard filling, all nestled in a flaky pastry crust.
Ingredients
- 1 9-inch pie crust
- 1 cup Gruyère cheese, grated
- 1 cup mixed wild mushrooms, such as chanterelles and porcini, chopped
- 4 eggs
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a 9-inch pie dish and crimp the edges.
- Sprinkle the grated Gruyère cheese evenly over the bottom of the pie crust.
- In a skillet, heat the butter and olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and chopped wild mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 8 minutes. Let cool slightly.
- In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.
- Spoon the mushroom mixture over the cheese in the pie crust.
- Pour the egg mixture over the mushrooms.
- Bake the quiche for 40-45 minutes, or until the center is set and the top is golden brown.
- Let the quiche cool for 10 minutes before slicing and serving.
