Alpine Wild Mushroom and Gruyère Quiche (Alpen Wildpilz-Gruyère-Quiche)

Ingredients

  • 1 9-inch pie crust
  • 1 cup Gruyère cheese, grated
  • 1 cup mixed wild mushrooms, such as chanterelles and porcini, chopped
  • 4 eggs
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and crimp the edges.
  3. Sprinkle the grated Gruyère cheese evenly over the bottom of the pie crust.
  4. In a skillet, heat the butter and olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  5. Add the minced garlic and chopped wild mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 8 minutes. Let cool slightly.
  6. In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.
  7. Spoon the mushroom mixture over the cheese in the pie crust.
  8. Pour the egg mixture over the mushrooms.
  9. Bake the quiche for 40-45 minutes, or until the center is set and the top is golden brown.
  10. Let the quiche cool for 10 minutes before slicing and serving.
