Ingredients

  • 500g mixed mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 liter vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown.
  3. Pour in the vegetable broth and add the bay leaf and dried thyme. Season with salt and pepper to taste.
  4. Simmer the soup for 20 minutes, allowing the flavors to meld together.
  5. Remove the bay leaf and adjust the seasoning if necessary.
  6. Serve the soup hot, garnished with chopped fresh parsley.
