Alu Vadi (आळू वडी)

Ingredients

  • 8-10 colocasia leaves
  • 1 cup chickpea flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1 tsp sesame seeds
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tbsp tamarind pulp
  • Salt to taste
  • Oil for frying

Instructions

  1. Wash and pat dry the colocasia leaves.
  2. In a bowl, mix chickpea flour, turmeric powder, red chili powder, cumin seeds, sesame seeds, ginger paste, garlic paste, tamarind pulp, and salt to make a smooth batter.
  3. Spread the batter evenly on the colocasia leaves.
  4. Roll the leaves and steam for 15 minutes.
  5. Cut the steamed rolls into slices.
  6. Heat oil in a pan and fry the slices until golden brown.
  7. Remove and drain on a paper towel.
  8. आळू वडी (Alu Vadi) is ready to be served hot with chutney or ketchup.
