आळू वडी (Alu Vadi) is a popular Maharashtrian snack made with colocasia leaves and spiced chickpea flour. It is a delicious and savory dish that is perfect for tea-time or as an appetizer.
Ingredients
- 8-10 colocasia leaves
- 1 cup chickpea flour (besan)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1 tsp sesame seeds
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tbsp tamarind pulp
- Salt to taste
- Oil for frying
Instructions
- Wash and pat dry the colocasia leaves.
- In a bowl, mix chickpea flour, turmeric powder, red chili powder, cumin seeds, sesame seeds, ginger paste, garlic paste, tamarind pulp, and salt to make a smooth batter.
- Spread the batter evenly on the colocasia leaves.
- Roll the leaves and steam for 15 minutes.
- Cut the steamed rolls into slices.
- Heat oil in a pan and fry the slices until golden brown.
- Remove and drain on a paper towel.
- आळू वडी (Alu Vadi) is ready to be served hot with chutney or ketchup.
