Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup cornstarch
  • 2 eggs
  • 1 cup ice water
  • 1 cup all-purpose flour
  • Oil for frying
  • 1/2 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1/4 cup chopped green onions

Instructions

  1. In a bowl, mix the sweet chili sauce, soy sauce, rice vinegar, garlic, ginger, and green onions. Set aside.
  2. In a separate bowl, combine the cornstarch, eggs, and ice water. Mix until smooth.
  3. Dip the shrimp into the all-purpose flour, then into the batter mixture.
  4. Heat the oil in a deep pan or pot to 375°F (190°C).
  5. Fry the shrimp in batches for 2-3 minutes or until golden brown and crispy. Drain on paper towels.
  6. Toss the fried shrimp in the sweet chili sauce mixture until coated.
  7. Serve the Amai Chili Ebi Tempura immediately and enjoy!
