Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup cornstarch
- 2 eggs
- 1 cup ice water
- 1 cup all-purpose flour
- Oil for frying
- 1/2 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1/4 cup chopped green onions
Instructions
- In a bowl, mix the sweet chili sauce, soy sauce, rice vinegar, garlic, ginger, and green onions. Set aside.
- In a separate bowl, combine the cornstarch, eggs, and ice water. Mix until smooth.
- Dip the shrimp into the all-purpose flour, then into the batter mixture.
- Heat the oil in a deep pan or pot to 375°F (190°C).
- Fry the shrimp in batches for 2-3 minutes or until golden brown and crispy. Drain on paper towels.
- Toss the fried shrimp in the sweet chili sauce mixture until coated.
- Serve the Amai Chili Ebi Tempura immediately and enjoy!
