Ingredients

  • 6 large lemons, preferably organic
  • 1 liter of vodka
  • 2 cups of granulated sugar
  • 2 cups of water

Instructions

  1. Using a vegetable peeler, carefully peel the lemons, avoiding the white pith.
  2. Place the lemon peels in a large glass jar and pour the vodka over them. Seal the jar and let it sit in a cool, dark place for at least 4 days, shaking the jar gently every day.
  3. After 4 days, combine the sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved, then remove from heat and let the syrup cool to room temperature.
  4. Add the cooled syrup to the vodka and lemon peels, then reseal the jar and let it sit for another 4 days, shaking gently once a day.
  5. After the second 4-day period, strain the limoncello through a fine mesh sieve or cheesecloth to remove the lemon peels. Transfer the limoncello to bottles and store in the freezer until ready to serve.
