Amalfi Limoncello
Amalfi limoncello is a traditional Italian lemon liqueur that is perfect for sipping on a warm summer evening. This recipe will guide you through the process of making your own delicious limoncello at home.
Ingredients
- 6 large lemons, preferably organic
- 1 liter of vodka
- 2 cups of granulated sugar
- 2 cups of water
Instructions
- Using a vegetable peeler, carefully peel the lemons, avoiding the white pith.
- Place the lemon peels in a large glass jar and pour the vodka over them. Seal the jar and let it sit in a cool, dark place for at least 4 days, shaking the jar gently every day.
- After 4 days, combine the sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved, then remove from heat and let the syrup cool to room temperature.
- Add the cooled syrup to the vodka and lemon peels, then reseal the jar and let it sit for another 4 days, shaking gently once a day.
- After the second 4-day period, strain the limoncello through a fine mesh sieve or cheesecloth to remove the lemon peels. Transfer the limoncello to bottles and store in the freezer until ready to serve.
