Amarula Chocolate Mousse

Ingredients
- 1 cup dark chocolate, chopped
- 1/4 cup Amarula liqueur
- 1/4 cup unsalted butter
- 3 eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream
Instructions
- In a heatproof bowl, melt the dark chocolate, Amarula liqueur, and unsalted butter over a double boiler. Once melted, remove from heat and let it cool slightly.
- In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy. Gradually pour the chocolate mixture into the egg yolk mixture, stirring constantly.
- In another bowl, whip the egg whites until stiff peaks form. In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped egg whites into the chocolate mixture, followed by the whipped cream, until fully combined.
- Divide the mousse into serving glasses or ramekins and refrigerate for at least 4 hours, or until set.
- Before serving, garnish with chocolate shavings or a dollop of whipped cream, if desired.
