Ingredients
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1/4 cup Amarula liqueur
- 1 teaspoon vanilla extract
- Extra granulated sugar for caramelizing
Instructions
- Preheat the oven to 325°F (165°C).
- In a saucepan, heat the heavy cream, whole milk, and 1/2 cup of sugar over medium heat, stirring occasionally until the mixture is hot but not boiling.
- In a separate bowl, whisk the egg yolks, Amarula liqueur, and vanilla extract together.
- Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
- Strain the custard through a fine-mesh sieve into a large measuring cup or bowl.
- Divide the custard among 6 ramekins and place them in a large baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight.
- Before serving, sprinkle a thin, even layer of granulated sugar over the custards and caramelize with a kitchen torch or under a broiler.
- Let the caramelized sugar harden for a few minutes before serving.
