Amarula Crème Brûlée

Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1/4 cup Amarula liqueur
  • 1 teaspoon vanilla extract
  • Extra granulated sugar for caramelizing

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, heat the heavy cream, whole milk, and 1/2 cup of sugar over medium heat, stirring occasionally until the mixture is hot but not boiling.
  3. In a separate bowl, whisk the egg yolks, Amarula liqueur, and vanilla extract together.
  4. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
  5. Strain the custard through a fine-mesh sieve into a large measuring cup or bowl.
  6. Divide the custard among 6 ramekins and place them in a large baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.
  7. Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center.
  8. Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours, or overnight.
  9. Before serving, sprinkle a thin, even layer of granulated sugar over the custards and caramelize with a kitchen torch or under a broiler.
  10. Let the caramelized sugar harden for a few minutes before serving.
