  • 1 teaspoon turmeric

  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (such as carrots, bell peppers, and green beans), chopped
  • Salt and pepper to taste
  • 2 cups cooked rice for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
