Pasta all'Amatriciana, also known as Amatriciana Pasta, is a classic Italian dish hailing from the town of Amatrice. This flavorful pasta dish features a rich tomato sauce with crispy pancetta or guanciale, finished with a generous grating of Pecorino Romano cheese.
Ingredients
- 1 pound (450g) bucatini or spaghetti
- 1 tablespoon olive oil
- 4 ounces (115g) pancetta or guanciale, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 can (28 ounces/800g) whole peeled tomatoes, crushed by hand
- Salt and black pepper to taste
- 1/2 cup (50g) Pecorino Romano cheese, grated
Instructions
- In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the pancetta or guanciale and cook until crispy, about 5 minutes.
- Stir in the onion and cook until softened, about 3 minutes. Add the garlic and red pepper flakes, and cook for an additional 1 minute.
- Pour in the crushed tomatoes and season with salt and black pepper. Simmer the sauce for 15-20 minutes, stirring occasionally.
- Add the cooked pasta to the skillet with the sauce and toss to combine.
- Serve the pasta in individual bowls, topped with a generous sprinkle of Pecorino Romano cheese.
