Amatriciana Pasta (Pasta all'Amatriciana)

Ingredients

  • 1 pound (450g) bucatini or spaghetti
  • 1 tablespoon olive oil
  • 4 ounces (115g) pancetta or guanciale, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 can (28 ounces/800g) whole peeled tomatoes, crushed by hand
  • Salt and black pepper to taste
  • 1/2 cup (50g) Pecorino Romano cheese, grated

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the pancetta or guanciale and cook until crispy, about 5 minutes.
  3. Stir in the onion and cook until softened, about 3 minutes. Add the garlic and red pepper flakes, and cook for an additional 1 minute.
  4. Pour in the crushed tomatoes and season with salt and black pepper. Simmer the sauce for 15-20 minutes, stirring occasionally.
  5. Add the cooked pasta to the skillet with the sauce and toss to combine.
  6. Serve the pasta in individual bowls, topped with a generous sprinkle of Pecorino Romano cheese.
