Amazonian Vegetable Stir-Fry (Sauté de légumes amazoniens)

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 1 cup cassava, peeled and sliced
  • 1 cup okra, trimmed and halved
  • 1 cup plantains, sliced
  • 1 cup cherry tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the red bell pepper, cassava, okra, and plantains to the skillet. Sauté for 8-10 minutes, or until the vegetables are tender.
  4. Add the cherry tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 3-5 minutes, stirring gently to combine all the ingredients.
  5. Remove from heat and serve the sautéed vegetables hot.
