Ingredients
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, julienned
- 1 cup cassava, peeled and sliced
- 1 cup okra, trimmed and halved
- 1 cup plantains, sliced
- 1 cup cherry tomatoes
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the red bell pepper, cassava, okra, and plantains to the skillet. Sauté for 8-10 minutes, or until the vegetables are tender.
- Add the cherry tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 3-5 minutes, stirring gently to combine all the ingredients.
- Remove from heat and serve the sautéed vegetables hot.
