Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 tbsp all-purpose flour
- 2 cups amber ale
- 2 cups beef broth
- 2 bay leaves
- 1 tsp caraway seeds
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- Lower the heat to medium and add the onions and garlic to the pot. Cook until the onions are soft and translucent.
- Sprinkle the flour over the onions and garlic, and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Pour in the amber ale and beef broth, and stir to combine. Add the browned beef back into the pot, along with the carrots, celery, bay leaves, and caraway seeds.
- Bring the stew to a simmer, then cover and reduce the heat to low. Let it simmer for 1.5-2 hours, or until the beef is tender.
- Season with salt and pepper to taste before serving.
