Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes

  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 tbsp all-purpose flour
  • 2 cups amber ale
  • 2 cups beef broth
  • 2 bay leaves
  • 1 tsp caraway seeds
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. Lower the heat to medium and add the onions and garlic to the pot. Cook until the onions are soft and translucent.
  3. Sprinkle the flour over the onions and garlic, and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  4. Pour in the amber ale and beef broth, and stir to combine. Add the browned beef back into the pot, along with the carrots, celery, bay leaves, and caraway seeds.
  5. Bring the stew to a simmer, then cover and reduce the heat to low. Let it simmer for 1.5-2 hours, or until the beef is tender.
  6. Season with salt and pepper to taste before serving.
