Amber Sunset Soup (Gintarinis saulėlydis)
Gintarinis saulėlydis, or Amber Sunset Soup, is a traditional Lithuanian dish that is as beautiful as it is delicious. This vibrant soup is perfect for warming up on a chilly evening or for impressing guests with its stunning color and rich flavors.
Ingredients
- 4 large beets, peeled and diced
- 2 carrots, peeled and diced
- 1 onion, chopped
- 2 potatoes, peeled and diced
- 6 cups vegetable broth
- 1 cup sour cream
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the beets, carrots, onion, potatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the vegetables are tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and puree until smooth, then return to the pot.
- Stir in the sour cream and dill, and season with salt and pepper to taste.
- Simmer for an additional 10 minutes, then serve hot.
