Ingredients

  • 4 large beets, peeled and diced
  • 2 carrots, peeled and diced
  • 1 onion, chopped
  • 2 potatoes, peeled and diced
  • 6 cups vegetable broth
  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the beets, carrots, onion, potatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the vegetables are tender.
  2. Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and puree until smooth, then return to the pot.
  3. Stir in the sour cream and dill, and season with salt and pepper to taste.
  4. Simmer for an additional 10 minutes, then serve hot.
