Amish Pickled Beets

Ingredients

  • 3 cups beets, cooked, peeled, and sliced
  • 1 cup apple cider vinegar
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon whole cloves
  • 1/2 teaspoon whole allspice

Instructions

  1. In a saucepan, combine the apple cider vinegar, sugar, water, salt, cloves, and allspice. Bring to a boil, then reduce heat and simmer for 5 minutes.
  2. Add the sliced beets to the saucepan and simmer for an additional 5 minutes.
  3. Remove from heat and let the beets cool in the pickling liquid.
  4. Transfer the pickled beets and liquid to a jar or container and refrigerate for at least 24 hours before serving.
