Ingredients
- 3 cups beets, cooked, peeled, and sliced
- 1 cup apple cider vinegar
- 1 cup sugar
- 1/2 cup water
- 1 teaspoon salt
- 1/2 teaspoon whole cloves
- 1/2 teaspoon whole allspice
Instructions
- In a saucepan, combine the apple cider vinegar, sugar, water, salt, cloves, and allspice. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Add the sliced beets to the saucepan and simmer for an additional 5 minutes.
- Remove from heat and let the beets cool in the pickling liquid.
- Transfer the pickled beets and liquid to a jar or container and refrigerate for at least 24 hours before serving.
