Amok de Peixe Eurasiano, or Eurasian Fish Amok, is a traditional dish that originated from the Eurasian cuisine. This flavorful and aromatic dish features tender pieces of fish cooked in a rich and creamy coconut curry, steamed in banana leaves for a unique and delightful presentation.
Ingredients
- 1 lb (450g) white fish fillets, such as cod or snapper
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon palm sugar or brown sugar
- 1 egg
- 1 kaffir lime leaf, finely sliced
- 1 red bell pepper, thinly sliced
- 1 cup baby spinach leaves
- Banana leaves for wrapping (optional)
Instructions
- In a bowl, mix the coconut milk, red curry paste, fish sauce, and palm sugar until well combined.
- Add the egg to the mixture and whisk until smooth.
- Cut the fish fillets into bite-sized pieces and place them in the coconut curry mixture. Add the kaffir lime leaf and bell pepper. Mix gently to coat the fish with the curry sauce.
- Place a piece of banana leaf on a clean surface. Spoon some baby spinach leaves onto the center of the leaf. Top with the fish and curry mixture.
- Wrap the banana leaf around the fish to form a parcel. Secure with toothpicks if needed.
- Steam the fish parcels for 15-20 minutes until the fish is cooked through.
- Serve the Amok de Peixe Eurasiano hot with steamed rice.
