Ingredients

  • 1 lb (450g) white fish fillets, such as cod or snapper
  • 1 cup coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar or brown sugar
  • 1 egg
  • 1 kaffir lime leaf, finely sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup baby spinach leaves
  • Banana leaves for wrapping (optional)

Instructions

  1. In a bowl, mix the coconut milk, red curry paste, fish sauce, and palm sugar until well combined.
  2. Add the egg to the mixture and whisk until smooth.
  3. Cut the fish fillets into bite-sized pieces and place them in the coconut curry mixture. Add the kaffir lime leaf and bell pepper. Mix gently to coat the fish with the curry sauce.
  4. Place a piece of banana leaf on a clean surface. Spoon some baby spinach leaves onto the center of the leaf. Top with the fish and curry mixture.
  5. Wrap the banana leaf around the fish to form a parcel. Secure with toothpicks if needed.
  6. Steam the fish parcels for 15-20 minutes until the fish is cooked through.
  7. Serve the Amok de Peixe Eurasiano hot with steamed rice.
