Ingredients

  • 1 lb white fish fillets, such as cod or tilapia
  • 1 cup coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon palm sugar or brown sugar
  • 1 egg
  • 1 kaffir lime leaf, thinly sliced (optional)
  • 1 red bell pepper, thinly sliced
  • 1 cup fresh spinach or banana leaf cups for serving

Instructions

  1. In a bowl, mix together the coconut milk, fish sauce, red curry paste, and palm sugar.
  2. Add the fish fillets to the bowl and marinate for 10 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated fish in a banana leaf cup or a small baking dish.
  5. Beat the egg and pour it over the fish.
  6. Top with sliced red bell pepper and kaffir lime leaf.
  7. Bake for 20-25 minutes until the fish is cooked through.
  8. Serve the fragrant fish amok in the banana leaf cups or on a plate with steamed rice.
