Ampesi Affair
Ampesi is a traditional Ghanaian dish that consists of boiled yam, plantains, and cocoyam, served with a flavorful stew. This dish is a staple in Ghanaian cuisine and is often enjoyed with family and friends.
Ingredients
- 2 large yams, peeled and cut into chunks
- 2 ripe plantains, peeled and cut into chunks
- 4 cocoyams, peeled and cut into chunks
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 red bell peppers, chopped
- 2 scotch bonnet peppers, chopped
- 1 cup vegetable broth
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- Place the yam, plantains, and cocoyams in a large pot and cover with water. Boil for 20-25 minutes or until tender.
- In a separate pot, heat the vegetable oil over medium heat. Add the chopped onions, tomatoes, and bell peppers. Cook for 5 minutes until softened.
- Add the scotch bonnet peppers, ground ginger, garlic powder, and salt to the pot. Stir well to combine.
- Pour in the vegetable broth and simmer for 10 minutes to allow the flavors to meld.
- Once the yam, plantains, and cocoyams are tender, drain the water and serve with the stew on top.
