Ingredients
- 1 ripe pineapple, peeled and diced
- 1 cup white vinegar
- 1 cup brown sugar
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp mustard seeds
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp cayenne pepper
- Salt to taste
Instructions
- In a large saucepan, combine the diced pineapple, white vinegar, brown sugar, chopped onion, minced garlic, grated ginger, mustard seeds, turmeric, cinnamon, cloves, and cayenne pepper.
- Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30-40 minutes, stirring occasionally, until the chutney thickens.
- Season with salt to taste and remove from heat. Let the chutney cool before transferring it to sterilized jars for storage.
