Ingredients

  • 1 ripe pineapple, peeled and diced
  • 1 cup white vinegar
  • 1 cup brown sugar
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp cayenne pepper
  • Salt to taste

Instructions

  1. In a large saucepan, combine the diced pineapple, white vinegar, brown sugar, chopped onion, minced garlic, grated ginger, mustard seeds, turmeric, cinnamon, cloves, and cayenne pepper.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30-40 minutes, stirring occasionally, until the chutney thickens.
  3. Season with salt to taste and remove from heat. Let the chutney cool before transferring it to sterilized jars for storage.
