Ananas Curry (sri Lankan Pineapple Curry)

Ingredients

  • 1 ripe pineapple, peeled and cubed
  • 1 onion, finely chopped
  • 2-3 green chilies, sliced
  • 1-inch piece of ginger, grated
  • 3-4 garlic cloves, minced
  • 1 sprig curry leaves
  • 1 cinnamon stick
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 cup coconut milk
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a pan and add mustard seeds. Once they start to splutter, add curry leaves, cinnamon stick, and chopped onion. Sauté until the onion turns golden brown.
  2. Add grated ginger, minced garlic, and green chilies. Sauté for a few minutes until the raw aroma disappears.
  3. Sprinkle turmeric powder and red chili powder. Mix well to coat the spices evenly.
  4. Add the cubed pineapple and stir to combine with the spices.
  5. Pour in the coconut milk and season with salt. Cover and simmer for 15-20 minutes until the pineapple is tender.
  6. Once the curry reaches the desired consistency, remove from heat and serve hot with steamed rice or roti.
