Ananas Curry (sri Lankan Pineapple Curry)

Ingredients
- 1 ripe pineapple, peeled and cubed
- 1 onion, finely chopped
- 2-3 green chilies, sliced
- 1-inch piece of ginger, grated
- 3-4 garlic cloves, minced
- 1 sprig curry leaves
- 1 cinnamon stick
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 cup coconut milk
- Salt to taste
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a pan and add mustard seeds. Once they start to splutter, add curry leaves, cinnamon stick, and chopped onion. Sauté until the onion turns golden brown.
- Add grated ginger, minced garlic, and green chilies. Sauté for a few minutes until the raw aroma disappears.
- Sprinkle turmeric powder and red chili powder. Mix well to coat the spices evenly.
- Add the cubed pineapple and stir to combine with the spices.
- Pour in the coconut milk and season with salt. Cover and simmer for 15-20 minutes until the pineapple is tender.
- Once the curry reaches the desired consistency, remove from heat and serve hot with steamed rice or roti.
