Ingredients
- 1 whole duck, about 5 lbs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup pine nuts
- 1/4 cup raisins
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
- 1/4 cup olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic, parsley, pine nuts, raisins, basil, salt, and pepper.
- Stuff the duck with the breadcrumb mixture and truss the duck with kitchen twine.
- Place the duck in a roasting pan and drizzle with olive oil.
- Roast the duck in the preheated oven for about 2 hours, or until the internal temperature reaches 165°F (74°C).
- Let the duck rest for 10 minutes before carving.
