Anatra Ripiena (ligurian Style Stuffed Duck)

Ingredients

  • 1 whole duck, about 5 lbs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic, parsley, pine nuts, raisins, basil, salt, and pepper.
  3. Stuff the duck with the breadcrumb mixture and truss the duck with kitchen twine.
  4. Place the duck in a roasting pan and drizzle with olive oil.
  5. Roast the duck in the preheated oven for about 2 hours, or until the internal temperature reaches 165°F (74°C).
  6. Let the duck rest for 10 minutes before carving.
