Anchu Kumm Barthad (coorgi Style Mushroom Fry)

Ingredients

  • 500g mushrooms, sliced
  • 2 onions, finely chopped
  • 3-4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons Coorgi masala powder
  • Salt to taste
  • 2 tablespoons oil
  • Few curry leaves
  • Coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add the chopped onions. Sauté until they turn golden brown.
  2. Add the green chilies and ginger-garlic paste. Sauté for a few minutes.
  3. Now, add the sliced mushrooms and sauté for 5-7 minutes until they are cooked and any liquid has evaporated.
  4. Add turmeric powder, Coorgi masala powder, and salt. Mix well and cook for another 5 minutes.
  5. Garnish with curry leaves and coriander leaves. Serve hot.
