Anchu Kumm Barthad (coorgi Style Mushroom Fry)
Anchu Kumm Barthad is a traditional Coorgi dish that features deliciously spiced mushrooms. This flavorful mushroom fry is a popular dish in Kodava Cuisine, known for its bold and aromatic flavors.
Ingredients
- 500g mushrooms, sliced
- 2 onions, finely chopped
- 3-4 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons Coorgi masala powder
- Salt to taste
- 2 tablespoons oil
- Few curry leaves
- Coriander leaves for garnish
Instructions
- Heat oil in a pan and add the chopped onions. Sauté until they turn golden brown.
- Add the green chilies and ginger-garlic paste. Sauté for a few minutes.
- Now, add the sliced mushrooms and sauté for 5-7 minutes until they are cooked and any liquid has evaporated.
- Add turmeric powder, Coorgi masala powder, and salt. Mix well and cook for another 5 minutes.
- Garnish with curry leaves and coriander leaves. Serve hot.
