Anchu Kumm Curry (coorgi Mushroom Fry)

Ingredients

  • 500g fresh mushrooms, cleaned and sliced
  • 2 onions, finely chopped
  • 3-4 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons Coorgi masala powder
  • 1 tablespoon tamarind pulp
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and sauté the onions until golden brown.
  2. Add green chilies and ginger-garlic paste, and sauté for a minute.
  3. Add turmeric powder, Coorgi masala powder, and tamarind pulp. Mix well.
  4. Add the sliced mushrooms and salt. Cook on medium heat until the mushrooms are tender.
  5. Garnish with fresh coriander leaves and serve hot.
