Anchu Kumm Curry (coorgi Style Mushroom Curry)
Anchu Kumm Curry is a traditional Coorgi style mushroom curry that is rich in flavor and spices. This dish is a popular part of Kodava Cuisine, known for its bold and aromatic flavors.
Ingredients
- 500g fresh mushrooms, sliced
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/2 cup grated coconut
- 1 tbsp ginger-garlic paste
- 2-3 green chilies, slit
- 1 tsp turmeric powder
- 1 tbsp Coorgi masala powder
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A few curry leaves
- Salt to taste
- 2 tbsp oil
- 2 cups water
Instructions
- Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Sauté until the seeds crackle.
- Add chopped onions and sauté until golden brown.
- Now, add ginger-garlic paste and green chilies. Sauté for a few minutes.
- Next, add the tomato puree, turmeric powder, Coorgi masala powder, and salt. Cook until the oil separates.
- Add the sliced mushrooms and cook for 5 minutes.
- Pour in 2 cups of water and simmer for 10-15 minutes until the mushrooms are cooked and the curry thickens.
- Finally, add grated coconut and simmer for another 2-3 minutes.
- Remove from heat and serve hot with steamed rice or roti.
